Chef Jean-Claude and the class last night were smiling (and laughing when I
S-Q-U-E-A-L-E-D) when I shared my experiences in re-creating Chef Jean-Claude’s Coq au Vin and Magical Chocolate Soufflé (a tribute recipe to Lady Freedom) from Legendary Cuisine!
I shared it was great reading the stories behind the recipes, and the instructions were easy to follow and anyone can recreate Chef Jean-Claude’s recipes in Legendary Cuisine.

Did I mention no previous skills are needed and EVERYONE takes a turn in participating throughout the night; this is a VERY interactive “hands-on” cooking class sharing Adelaide Homefresh Flavours of Asia Food #Laksa Journey!
What went on this week in this “very interactive” Adelaide Homefresh Flavours of Asia Food #Laksa Journey cooking class?, “I hear” you ask with curiosity?
There was a lot of chopping, dicing, slicing, talking, laughter, demonstrating, tasting, smelling the night away!
Chef Jean-Claude demonstrated how to properly cut and slice mangoes that would be a “healthy” part of out “tribute to the King” Mountain Salad.
The skills were “quickly and easily” picked up by the class with everyone asked, “What’s next?”
There were carrots to peel and shave, bok choy to cut, ginger to cut and chop, mint to pick, coriander to wash, clean and prepare; Chef Jean-Claude shared how to cut lemongrass and how to finely dice lemongrass.
Do you know “the trick” aka Chef Jean-Claude’s “hint and tip” of cutting lemongrass?
Our class now does!
Chef Jean-Claude also “introduced” the mortar and pestle with the “proper wrist action” on how to make the perfect garlic and ginger paste!
Everyone was made to feel like food champions on the night and you could “feel and see” how proud each person was to have prepared their share as we ALL (based on the WONDERFUL smells) were getting hungry!
This was a “full on fun” night and I honestly wish you were there!
While all of these “lovely” ingredients were prepared, I guess I should have mentioned that the air was “full of aromatic flavors.”
The Homefresh chicken ttock was “slightly simmering away”, the coconut milk, herbs and spices were “dancing” in the pot (almost literally)!
“Are those “prawns” I see?” I “hear” you say?
You are “spot on” (precisely correct in Aussie lingo)!
There was a second laska also simmering as Homefresh Experience Cooking Classes caters to all dietary needs.
All you need to do is let Chef Jean-Claude know and he is always “more than” accommodating to prepare something so everyone can enjoy the communal eating experience.
One of the ingredients that the group was particularly “intrigued” about was the enoki mushrooms!
The enoki mushrooms are long, thin white mushrooms used in Asian cuisine.
Enoki Mushrooms come in two varieties; cultivated (white in color) and wild (dark brown in color).
Enokis are known by various names such as nametake, yuki-motase and (my fave) snow puff mushrooms.
The other mushroom in the photo above are Oyster Mushrooms which are named for their firm skin and resemblance to an oyster.
Oyster mushrooms have a “unique smell” which is difficult to describe.
I wish you could just reach through the screen and smell them now!
Just like the Mountain that was built “as a tribute to the King” in Middle Eastern #Food Journey:
There are a number of similarities between South East Asia Thai cuisine and Middle Eastern foods “prepared for a King.”
Are YOU as E-X-C-I-T-E-D as the group and I were in creating our Mountain to present to the King?
First there was the sauce (of course!) to prepare!
I wonder WHO that person is in the background is that photo bombed this photo…..mmmmmmm, he has a Homefresh Experience “official” shirt on…..

As the Mountain was “creatively” being done, Chef Jean-Claude shared his stories of Thai cuisine during this part of our Adelaide Homefresh Flavours of Asia Food #Laksa Journey; how presentation is important and how Kings used to eat on plates of alabaster.
In China, jade was used for its elegance and presentation.
“And what about the laska?”, I “hear” you asked?
Chef Jean-Claude shared how to tell when the vermicelli noodles are done.
I’m going to be a food tease as don’t want to share all of Chef Jean-Claude’s secrets from the night, but I CAN share the way it is done IS fun!
The Adelaide Homefresh Flavours of Asia Food #Laksa Journey group were indeed all happy as we mmmmmmmmm’ed and mmmmmmmmmmmmm’ed the closing of the night away!
